Holiday Amazake-Nog

Nothing says the holidays to me like delicious warming smells coming from the kitchen. I like to make cranberry spice cakes, ginger cookies, mulled cider and my favorite: Amazake-Nog! Amazake has that thick creamy texture similar to eggnog. When warmed with the spices and vanilla the smells are heavenly and the coziness factor is through the roof. So grab your favorite Holiday book or movie and settle down with some Amazake-Nog!

 

Vegan Eggnog aka:Amazake-Nog
Serves 4

2-16 oz bottles Rhapsody Amazake                                                                                                                                                                                                           1 tsp-vanilla extract
1/2 tsp- cinnamon (or 1 cinnamon stick)
1/2 tsp- nutmeg

Bring Amazake to a simmer in a saucepan with a thick bottom (to prevent burning) while stirring occasionally. Add remaining ingredients, simmer for 1 minute and turn off heat. Cover pot and allow to sit for another minute or two so that the flavors can mingle. Serve hot and Enjoy!

Alterations:

-Play with the quantity of spices to taste.

-Eggnog is typically a very fat-full drink. It is made of eggs and cream after all.  Amazake has hardly any fat in it (1 gram per serving). If you are like me and like the richness of the fat, substituting 1/2 cup of Amazake for soymilk can contribute a little fat to the pot.

-If the Amazake it really too thick add some water to dilute it.
