Happy New Year Dear Foodies and Friends!
2018 was like a jar of onion daikon pickles. Delicious, bubbly, slightly spicy, probiotic and health-full. What more could we ask for. Thank you all for your continued support of our family business here in rural Vermont.
As you walk into 2019, whether treading with enthusiasm or slight trepidation, we have three gifts for you. A Recipe, A Wish and an Invitation.
A Recipe:
Onion Daikon Pickles
- two quart size glass jars
- 2 large onions
- 2-4 daikon radishes
- 1/2 cup soy sauce
- 2 Tbsp raw apple cider vinegar (optional)
- 2 Tbsp mirin or brown rice syrup (optional)
Cut the onions in half (from top to bottom) and slice the onions as thinly as you can. Cut the daikon into slices or thin sticks about 2 inches x 1/4 inch. Stuff the quart jar as full as you can layering the onions and daikon. Pour the soy sauce over top and push the vegetables down with a pestle or wooden spoon. When the vegetables have shrunk a little, add more onion or daikon if needed. Add apple cider vinegar if you like pickles a little more sour and/or the mirin/brown rice syrup if you prefer them a little sweet. Leave the jar at room temperature with the lid loose for about a week. Push the vegetables down occasionally and look for bubbles as evidence of fermentation. Once active, tighten lid and move to refrigerator. Enjoy with rice, noodles, and as a side dish to most meals.
A Wish:
May you be stepping seamlessly into 2019 without skipping a beat. Without doubting your worth or questioning your growth. Without setting expectations prompted by forces outside of yourself. May you move into a new year with the deep knowing that who you are, from the tip of your toes to the crown of your head, is pure, true and a beautiful addition to this world we share. May your inner truth lead your heart, guide your days, feed your health, and help you to continue to grow and build your life into exactly what it should be. Oh, and fermented foods………we wish you all the fermented foods!

I especially liked the Wish. I will be 65 years old on this coming July and although a bit late, I have started to work on just about all that’s mentioned you mention in it.
I like your business a lot and wish I lived closer so I could buy the amazake and rice milk that Rhapzody makes. I used to make my own but, it’s too time consuming for me now.
I live in Southern California and I once made the suggestion, to the health food store where I buy my groceries, to carry your amazake and rice milk but, got no results.

Thank you for sharing, it encourage me to share part of my health journey. I too have decided to work on all that was mentioned this past year after turning 60. A bit late, but looking back on all life’s twists and turns I think I have always been a late bloomer. Colorado has come a long way with having healthy food options available. When we moved here nineteen years ago there was only one health food store in our cityin a 55 mile radius. Tempeh was not something you found in your typical grocery stores. I love Rhapsody’s no rice tempeh!Growing up in New England (Vermont is where I learned to ski) I was very excited to find Rhapsody’s tempeh came from an area on this globe that I love. My lifestyle change came with a decision to find a way to at least slow, the crippling, painful and deforming arthritis both my parents suffer from and the frequent bouts of diverticulites I was experiencing. I started following the the Plant Paradox almost 9 months ago, eliminating and reducing foods with lectins. It has helped my health tremendously. I was very excited to find a tempeh without rice at Rhapsody.

As I responded to Esther, I believe there is no “right” time to make decisions from the heart. And try our natto if you haven’t already. It is notoriously potent in helping prevent and treat arthritis as well as aid digestive system illnesses. May this new journey towards a more healthful and pain-free life bring you many fun food adventures.
Oh Esther, I don’t believe that the “right” time exists, therefore it can never be late in regards to work of the heart. We discover what we need exactly when we need it. Thank you so much for your sweet reply.
