Happy New Year Dear Foodies and Friends!

2018 was like a jar of onion daikon pickles. Delicious, bubbly, slightly spicy, probiotic and health-full. What more could we ask for. Thank you all for your continued support of our family business here in rural Vermont.

As you walk into 2019, whether treading with enthusiasm or slight trepidation, we have three gifts for you. A Recipe, A Wish and an Invitation.

A Recipe:

Onion Daikon Pickles

  • two quart size glass jars
  • 2 large onions
  • 2-4 daikon radishes
  • 1/2 cup soy sauce
  • 2 Tbsp raw apple cider vinegar (optional)
  • 2 Tbsp mirin or brown rice syrup (optional)

Cut the onions in half (from top to bottom) and slice the onions as thinly as you can. Cut the daikon into slices or thin sticks about 2 inches x 1/4 inch. Stuff the quart jar as full as you can layering the onions and daikon. Pour the soy sauce over top and push the vegetables down with a pestle or wooden spoon. When the vegetables have shrunk a little, add more onion or daikon if needed. Add apple cider vinegar if you like pickles a little more sour and/or the mirin/brown rice syrup if you prefer them a little sweet. Leave the jar at room temperature with the lid loose for about a week. Push the vegetables down occasionally and look for bubbles as evidence of fermentation. Once active, tighten lid and move to refrigerator. Enjoy with rice, noodles, and as a side dish to most meals.

A Wish:

May you be stepping seamlessly into 2019 without skipping a beat. Without doubting your worth or questioning your growth. Without setting expectations prompted by forces outside of yourself. May you move into a new year with the deep knowing that who you are, from the tip of your toes to the crown of your head, is pure, true and a beautiful addition to this world we share. May your inner truth lead your heart, guide your days, feed your health, and help you to continue to grow and build your life into exactly what it should be. Oh, and fermented foods………we wish you all the fermented foods!
